To brew flavorful coffee, you want to have mineral content in your water. If you use distilled water in which minerals have been removed, you’ll likely get a dull-tasting cup of coffee. Just like how certain foods can taste bland without any seasonings. However, espresso extraction works differently and doesn't require minerals to enhance its flavor.
